The large capacity Bertazzoni ovens are ideal for all your holiday cooking and entertaining, but there are a few tips I can give you to help you achieve great results. The oven can be used in either Convection or non-Convection mode, but when cooking in Convection you will need to make some modifications.
When To Chose Convection
Using the Convection mode in the Bertazzoni oven is a matter of personal choice. Gas ovens have a strong, lively heat that cooks really well and quite fast; when you add the Convection element you get the additional benefits:
- Multi-rack cooking with no transference of flavor
- Faster roasting times of large cuts of meat
- Improved moisture retention
So when you want to roast a chicken with potatoes or bake several trays of cookies, choose Convection.
Because foods cook faster in Convection, if the temperature is too high the outside of the food will cook quickly but the inside will not be cooked through, so when you chose the Convection mode a temperature reduction is necessary. A very useful guide with temperatures for Convection and Non-Convection can be found in the manufacturer’s Use and Care Manual.
Before you get started on your holiday cooking, stage the oven with your roasting pans, baking sheets and casseroles and see how they fit best; this will help you plan your feast.
A 20 lb. un-stuffed turkey will take approximately 2 hours to roast in the Convection mode and maybe 2 ¾ – 3 hours in the non-Convection mode. You will need to allow at least 35-40 minutes for the resting, carving and gravy making. In that time you can load the oven with all the side dishes and cook them in the Convection mode, so everything will be piping hot and ready to serve together.
Typical side dishes such as stuffing, roasted vegetables and casseroles will take 35-40 minutes to cook; in addition you have all those burners to prepare gravy, cranberry sauce, mashed potatoes and last-minute vegetable sautés.
