Menu 2:

Vietnamese-Style Chicken Wings
24 – chicken wings or drummettes
2 – tablespoons vegetable oil
½ - cup sugar
1 – tablespoon of water
1/3 – cup Asian fish sauce
½ – teaspoon pepper

Preheat the oven to Convection 400 degrees.
If using the entire chicken wing, cut it into two pieces and discard the wing tip.
Toss with the vegetable oil and season with salt.
Spread onto a rimmed baking sheet and bake for 15-18 minutes until crispy, turning once so they don’t get too brown on one side.

Combine the sugar and water in a small saucepan and place over medium-high heat for about 7 minutes, or until the sugar turns a light caramel color.

Remove from the heat and add the fish sauce, take care because the sauce will boil vigorously. Return the pan to medium heat and cook for a minute or so, until slightly thickened. Stir in the pepper and toss the cooked wings with the sauce and serve.
