  This seasonal favorite is a great example of how to easily adapt recipes and cook them in the Steam Oven.  Traditionally Corned Beef is cooked with some liquid and spices in a heavy pan with a tight fitting lid (creating steam) for several hours.  In the Steam Oven we place the Corned Beef into a casserole dish add the water and spices and cook it uncovered in the Combination Convection Steam Mode at 300 degrees for 2  - 2 ½  hours or longer depending on the size.
