Prime RibTo successfully cook Prime Rib in the Convection Roast mode, cook the meat at 400 degrees for 15 minutes then reduce the temperature to 350 degrees for the remainder of the cooking time.  Cooking times will vary for boneless and bone in roasts but generally allow 1 ¼  - 1-½ hours, plus resting time for a 7-9lb roast.

Once you have decided on the size roast you will cook and the degree of doneness you can estimate the cooking and resting time.  This way you can plan the cooking time of the side dishes so that everything will be ready at one time. The following recipes quantities will yield 8 servings.

Cornu Fe ranges may be classical in design but the cooking capabilities are perfectly suited to the demands of our modern lives.  At first glance the ovens seem small especially when envisioning cooking a large turkey but because both ovens are Convection it's actually very easy as you can see from this image. The turkey was 20lbs and took 2 hours to cook in Convection and there was room to cook a 9x13 casserole with stuffing underneath.  I used the other oven to cook the corn pudding together with a medley of roasted root vegetables and some green beans with shallots and mushrooms.
